Preheat your oven to 400°F (200°C). (5 minutes)

In a 9x13 inch baking dish, combine the cherry tomatoes, red bell pepper, red onion, olive oil, garlic cloves, lemon juice, lemon zest, red pepper flakes, black pepper, Italian seasoning, dried basil, and sea salt. Toss to coat evenly. (5 minutes)

Create a small well in the center of the tomato mixture and place the block of feta cheese in the well. Drizzle the feta generously with olive oil, ensuring it's well coated on all sides. (2 minutes)

Bake in the preheated oven until the cherry tomatoes have burst and softened, and the feta is golden and melty, approximately 40-45 minutes. (40-45 minutes)

While the feta and tomatoes are baking, cook the pasta according to package directions in a large pot of salted boiling water until al dente (about 11 minutes). Reserve 1 cup of the pasta water before draining. (15 minutes)

Remove the baking dish from the oven. Using a spoon or fork, mash the roasted tomatoes, garlic, and peppers together with the softened feta cheese to create a creamy, flavorful sauce. (3 minutes)

Stir in the fresh spinach until it wilts from the heat of the sauce. Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a little of the reserved pasta water at a time until it reaches your desired consistency. (5 minutes)

Serve immediately, garnished with fresh basil or a drizzle of olive oil, if desired.

For an extra layer of flavor, try adding a sprinkle of parmesan cheese during the last 10 minutes of baking.
Feel free to substitute other vegetables such as zucchini, bell peppers (any color), or mushrooms.
If you don't have fresh lemon juice, bottled lemon juice will work in a pinch, but fresh is always best!
Consider broiling for the last few minutes to get the feta extra browned and bubbly.
